Why oil instead of butter?
Butter is solid at room temperature; oil is not. In a loaf you want soft even days later, liquid fat coats the flour proteins so they build less gluten and hold more moisture. This is the same logic behind the crumb in the vanilla sponge cake, pushed further: where a sponge celebrates air, banana bread celebrates tenderness.
The method
- Mash the bananas with a fork - small lumps are fine, they turn into flavour pockets.
- Whisk in sugar, egg, and oil until blended.
- Add flour, baking soda, and salt. Fold roughly a dozen strokes - the batter should look shaggy, not smooth.
- Pour into the lined tin and bake at 175 degrees Celsius for 50 to 55 minutes.
- Cool in the tin for ten minutes, then on a rack completely. Cutting warm banana bread smears the crumb.
One upgrade, one warning
Toast a handful of walnuts and scatter them over the batter before baking - the crust turns crisp against the soft interior. The warning: do not add a fourth banana. Extra fruit tips the moisture balance and the centre never sets. If you prefer a bake you can eat warm from the oven, chocolate chip cookies are the faster fix. And for a batter that punishes overmixing even faster, the fluffy pancakes page has the full lumpy-batter rules.
